What is acid coagulation?

Acid coagulation is a process in which the components of a liquid are condensed or precipitated by adding acid to the liquid.

Principle:

In many biological or chemical systems, the existence state and solubility of substances are closely related to the pH of the environment. Adding acid will change the pH value of the system, causing the charge properties of some substances to change, or causing some substances to react chemically with acid, thereby reducing their solubility, and then coagulation or precipitation. For example, in a protein solution, different proteins will have different charges at a specific pH value. When acid is added to bring the pH value of the solution close to the isoelectric point of a certain protein, the net charge carried by the protein molecule is zero, the electrostatic repulsion between molecules is reduced, and the protein molecules will aggregate with each other to form a precipitate, which is a common acid coagulation phenomenon.

Application:

Acid coagulation is used in many fields. In the food industry, making yogurt is based on the principle of acid coagulation. Lactic acid bacteria ferment to produce lactic acid, which causes the protein in milk to coagulate and form the unique texture of yogurt. In biochemical experiments, acid coagulation can be used to precipitate proteins for separation, purification or analysis of proteins.
